Recipe | Healthy Squash Pizza.

Since I've decided to start living a healthier lifestyle I've given up bread, which is the main ingredient to one of the best dish in the world: pizza. I then looked at other alternatives, portabello mushrooms, cauliflower crust etc before coming across the butternut squash beauty..

Ingredients:
(For one pizza)
1 Butternut squash (whole)
1 Cup of ground almonds
3 Tablespoons of flaxseed
1 Teaspoon of oregano
2 Tablespoons of corn flower
1/4 Teaspoons of salt & pepper

Pesto sauce for the base:
50 grams of pine nuts 
Large bunch of basil 
50 grams parmesan 
150 ml of olive oil 
1 garlic cloves

Toppings:
(That I used) 
Tomatoes
Mozzarella
Spinach
Olives 

Directions:



Step 1: Pre-heat the oven to 200 degrees, and slice the butternut squash into two halves and scoop out all of the seeds from the middle using a spoon. 


Step 2: After scooping out all the seeds place both halves face down in a shallow dish and fill half way with water, after this place the tray in the oven for 45 minutes and then sit and wait for them to roast.

Step 3: When the butternut squash is cooked and drain the water and leave aside to cool.

Step 4: In a bowl mix the three tablespoons of flaxseed and add six tablespoons of water leave this aside until it's needed later. 

Step 5: scoop out all the butternut squash excluding the skin, this won't be needed for the base. Place the butternut squash in a bowl and mash up so all of it's soft. 

Step 6: to this bowl add the flaxseed, ground almonds, corn flower, salt, pepper & oregano. Mix the hell out of the bowl so the mixture becomes a thick paste. 

Step 7: Line the baking tray with grease proof paper and spread the mixture out evenly, in whatever shape you fancy making the edges of the base thicker, as crusts. (Definitely not like I've done below haha)


Step 8: Put the base in the oven for 30-35 minutes on 200 degrees until it becomes darker and crispy around the edges. 

Step 9: Put all the pesto ingredients in a food processer until it become a thin paste.

Step 10: Cut up toppings of your choice ready to place on the base once it's cooked. 

Step 11: Once the base is cooked spread the pesto over the base and add the toppings of your choice. I added mozzarella, olives, tomatoes and spinach to mine. 


Step 12: place the pizza back in the oven for 10 minutes on 150 degrees until the toppings are all cooked. 

Step 13: Your pizza will now be rears to eat! Enjoy! ☺️
